    Grilled Cinnamon Apple Dutch Baby Recipe

    Whether you’re planning Sunday brunch for a crowd or a fruitfilled dessert for the family, a Dutch Baby is fluffy, delightful and surprisingly easy-to-make. You’ll use your grill like an oven to ‘bake’ this treat. To keep the cooking even and the bottom unburned, either use the indirect method of grilling or utilize a fire brick to raise your skillet off the heat.

     

     Makes: 1 10'" Skillet

     

    INGREDIENTS

    • 3 eggs
    • ¾ cup milk
    • ¾ cup flour
    • 1 tsp. vanilla
    • 2 tsp. cinnamon
    • ¼ tsp. salt
    • 1 large apple, peeled and sliced
    • ¼ cup light brown sugar
    • 1 tsp. lemon zest
    • 2 tbsp. butter
    • Mixed berries, for serving
    • Powdered sugar, for serving

     

    INSTRUCTIONS

    1. Set your grill to indirect heat or place a fire brick on the grate. Place your skillet over the burner turned off or fire brick, and then preheat the grill to high.
    2. In a bowl, whisk together eggs, milk, flour, vanilla, 1 tsp. cinnamon and salt; set aside.
    3. In another bowl, mix together apple slices, brown sugar, 1 tsp. of cinnamon and lemon zest.
    4. Place butter in the hot skillet, allowing it to melt and coat the bottom. Add the apple mixture, stirring in with the hot butter.
    5. Pour the batter over the apple mixture.
    6. Reduce heat to medium-high and bake 35-40 minutes with the lid closed until the edges and center are golden brown.
    7. Gently transfer onto a platter, and top with mixed berries and powdered sugar.
